Ecco alcuni elementi che riguardano la prevenzione di qualsiasi perdita e la stabilit\u00e0 dei pigmenti rossi nel vino. <\/p>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h2 class=\"wp-block-heading\"><strong>Cosa determina il colore rosso del vino rosso?<\/strong><\/h2>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#f7f7f7;flex-basis:50%\">\n<p><strong>I vini rossi devono il loro colore ai pigmenti estratti dalle bucce durante la macerazione nei tini di fermentazione. <\/strong>Si tratta delle antocianine, presenti nella buccia di tutte le variet\u00e0 rosse e nella polpa delle variet\u00e0 \u201ctintorie\u201d. <\/p>\n\n\n\n<p>Durante la fermentazione e la macerazione, le <strong>antocianine <\/strong>vengono estratte dalle bucce degli acini e finiscono nel mosto, <strong>contribuendo al colore del vino, sia in intensit\u00e0 che in sfumatura.<\/strong><\/p>\n\n\n\n<p>Sotto l\u2019influenza di vari fattori, come la concentrazione di tannini, il pH, la temperatura e la presenza di altri composti, i tannini possono reagire tra loro e formare legami chimici, portando alla loro polimerizzazione.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#f7f7f7;flex-basis:50%\">\n<p>I legami chimici formati durante la polimerizzazione dei tannini possono essere di diversi tipi, inclusi legami eterei e legami esterei. Una delle fasi della loro formazione genera la produzione di intermedi chiamati vinilfenolo e vinilguaiacolo. <\/p>\n\n\n\n<p>Durante la fermentazione alcolica del vino rosso, si osserva una combinazione di vinilfenoli e guaiacolo con le antocianine, che porta alla sintesi di pigmenti complessi e stabili, le vinilpiranoantocianine (VPA).<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:1%\"><\/div>\n\n\n\n<div class=\"wp-block-column has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#f7f7f7\">\n<p>Questa reazione \u00e8 possibile solo quando vengono utilizzati ceppi specifici di <em>Saccharomyces cerevisiae <\/em>che presentano attivit\u00e0 idrossicinnamato decarbossilasi (HCDC), che porta alla formazione di vinilfenoli che interagiscono immediatamente con le antocianine estratte durante la fermentazione alcolica.<\/p>\n\n\n\n<p>I ceppi di lievito <strong>Fermivin P21<\/strong>, <strong>Fermivin VR5<\/strong> e <strong>Fermivin A33<\/strong> presentano il livello pi\u00f9 elevato di attivit\u00e0 HCDC all&#8217;interno della gamma Fermivin, rispettivamente con il <strong>100% per P21,<\/strong> l&#8217;80% per <strong>VR5 <\/strong>e il 65% per <strong>A33,<\/strong> mentre i pi\u00f9 elevati livelli di HCDC della gamma di lieviti Anchor sono Exotics MOSAIC, Alchemy III e Alchemy IV.<\/p>\n<\/div>\n<\/div>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7
