AZOTO<\/strong><\/h3>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>Questo \u00e8 il nutriente pi\u00f9 importante per il lievito.<\/strong> Ha un effetto significativo sulla produzione di biomassa (il numero di cellule di lievito), sulla velocit\u00e0 della fermentazione alcolica e sulla qualit\u00e0 organolettica del vino finito.<\/p>\n\n\n\n<p><strong>L\u2019azoto \u00e8 disponibile in forma minerale <\/strong>(chiamata anche azoto inorganico) <strong>e in forma organica<\/strong>. Sebbene il lievito possa assimilare entrambe le forme, non trae lo stesso beneficio da entrambe. <\/p>\n\n\n\n<p><strong>Azoto organico:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>proviene dagli autolisati di lievito<\/strong>, naturalmente ricchi di amminoacidi liberi (precursori degli aromi tiolici ed esterici). Questo deficit pu\u00f2 anche impedire al lievito di assimilare l\u2019azoto organico. VITAMINE<\/strong><\/h3>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>La vitamina pi\u00f9 nota necessaria per la vinificazione \u00e8 la tiamina (vitamina B1),<\/strong> sebbene biotina, acido pantotenico e acido nicotinico siano anch\u2019essi richiesti durante la fase di moltiplicazione dei lieviti.<\/p>\n\n\n\n<p><strong>Queste vitamine sono naturalmente presenti nei nutrienti organici poich\u00e9 derivano dagli autolisati di lievito.<\/strong><\/p>\n\n\n\n<p>Sono particolarmente importanti quando il mosto ha un alto contenuto di YAN, che genera popolazioni elevate. MINERALI<\/strong><\/h3>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong>I minerali sono anch\u2019essi essenziali per la crescita del lievito, la struttura cellulare, le prestazioni fermentative, la tolleranza allo stress e l\u2019attivit\u00e0 enzimatica.<\/strong><\/p>\n\n\n\n<p><strong>Il minerale pi\u00f9 importante \u00e8 il magnesio<\/strong>, che svolge un ruolo fondamentale nella conversione del glucosio in etanolo. <strong>Inoltre rende il lievito pi\u00f9 resistente allo stress alcolico.<\/strong><\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:5%\"><\/div>\n\n\n\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<p>Una quantit\u00e0 molto piccola di zinco \u00e8 anch\u2019essa essenziale per convertire l\u2019etanolo (acetaldeide) in etanolo. Migliora inoltre la resistenza allo stress del lievito, le prestazioni fermentative e la produzione di esteri e alcoli superiori. <\/p>\n\n\n\n<p>L\u2019uso di integratori come l\u2019azoto organico proveniente dagli autolisati di lievito garantisce la presenza di questi due minerali.
