Ci\u00f2 pu\u00f2 provocare fermentazioni bloccate o lente e portare alla formazione di aromi e sapori indesiderati nel vino. <\/p>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Misurando il livello di YAN nel mosto prima della fermentazione, \u00e8 possibile capire se sia necessario aggiungere altro azoto per permettere ai lieviti di lavorare al meglio.
