Reidratare semplicemente i batteri liofilizzati in acqua pulita e priva di cloro (20 volte il peso) per 15 minuti. Quindi aggiungerli al serbatoio e omogeneizzarli tramite un rimontaggio delicato.<\/p>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h2 class=\"wp-block-heading\"><strong>Come gestire efficacemente la fermentazione malolattica? <\/strong><\/h2>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p>Tenere a mente questi parametri essenziali:<\/p>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<ol class=\"wp-block-list\">\n<li><strong>Temperatura:<\/strong> la MLF procede generalmente bene tra 18\u00b0C e 22\u00b0C (64\u00b0F \u2013 72\u00b0F). Temperature al di fuori di questo intervallo possono rallentare la fermentazione o inibirla completamente. <\/li>\n\n\n\n<li><strong>Livelli di pH:<\/strong> il pH ottimale per la MLF \u00e8 generalmente compreso tra 3,3 e 3,5. Un pH pi\u00f9 basso pu\u00f2 inibire i batteri dell\u2019acido lattico (LAB) responsabili della MLF, rendendo il processo di fermentazione pi\u00f9 complesso.<\/li>\n\n\n\n<li><strong>Livelli di SO\u2082<\/strong>: i livelli di anidride solforosa (SO\u2082) devono essere gestiti con attenzione per garantire che non inibiscano i LAB. In genere, la concentrazione totale di SO\u2082 dovrebbe essere mantenuta a &lt;50 mg\/L prima di avviare la MLF per evitare effetti negativi sui batteri.<\/li>\n<\/ol>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:2%\"><\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<ol start=\"4\" class=\"wp-block-list\">\n<li><strong>Concentrazione alcolica:<\/strong> livelli elevati di alcol possono anch\u2019essi inibire i LAB. I vini con un contenuto alcolico superiore al 14% possono creare difficolt\u00e0 per la MLF, richiedendo ceppi LAB pi\u00f9 robusti o strategie specifiche di acclimatazione.<\/li>\n\n\n\n<li><strong>Disponibilit\u00e0 di nutrienti:<\/strong> i LAB, come i lieviti, necessitano di nutrienti per prosperare. Tuttavia, le loro esigenze sono diverse.
