fungina (Aspergillopepsina I), prodotta tramite fermentazione controllata di un ceppo selezionato di <em>Aspergillus niger,<\/em> \u00e8 in grado di ridurre il contenuto di proteine instabili nel mosto ed \u00e8 attiva sia sulla chitinasica sia sulle proteine simili alla taumatina presenti nei vini bianchi e rosati.<\/p>\n\n\n\n<p>Naturalmente, contiene livelli trascurabili di cinnamil esterasi (nFCE) per preservare la freschezza aromatica, indipendentemente dal lievito scelto.<br>Il corretto utilizzo di <strong>Rapidase Proteostab<\/strong> permette di ottenere la stabilit\u00e0 1\u20132 minuti) per denaturare le proteine instabili e permetterne l\u2019idrolisi da parte della preparazione enzimatica. Un\u2019aggiunta di bentonite a 10 g\/hL inattiver\u00e0 l\u2019enzima dopo questo trattamento. <\/li>\n<\/ul>\n\n\n\n<div style=\"height:5px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li>La stabilit\u00e0 proteica pu\u00f2 essere verificata mediante il consueto test di riscaldamento. Tuttavia, se sono previsti ulteriori trattamenti con CMC o KPA, \u00e8 consigliabile utilizzare un test pi\u00f9 severo (test dei tannini), poich\u00e9 tali trattamenti possono interferire con altre proteine stabili.
