dise\u00f1ada para actuar sobre toda la gama de precursores arom\u00e1ticos ligados de forma glicos\u00eddica.<br>Se utiliza en dos aplicaciones distintas:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong><a href=\"#aromarelease\">Liberaci\u00f3n arom\u00e1tica en cualquier vino<\/a><\/strong> (terpenos, norisoprenoides)<\/li>\n\n\n\n<li><strong><a Preparar 7 botellas de 750 mL<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Utilizar el mismo vino para todas las botellas.<\/li>\n\n\n\n<li><strong>Mantener una botella como control no tratado<\/strong> (sin enzima).<\/li>\n\n\n\n<li>Las otras seis recibir\u00e1n adiciones enzim\u00e1ticas semanales.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>2. Preparar la soluci\u00f3n enzim\u00e1tica (para alcanzar 2 g\/hL)<\/strong><\/h2>\n\n\n\n<p>Para garantizar un ensayo representativo, la soluci\u00f3n enzim\u00e1tica se prepara <strong>en vino<\/strong>, no en agua.<\/p>\n\n\n\n<p>Preparaci\u00f3n:<\/p>\n\n\n\n<p>\u2022 Disolver <strong>0,5 g<\/strong> de Rapidase Revelation Aroma en <strong>500 mL<\/strong> del vino a ensayar.<br>\u2022 Preparar una <strong>soluci\u00f3n fresca cada semana.<\/strong><br>\u2022 Utilizar <strong>15 mL<\/strong> por botella cada semana.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>3. Adici\u00f3n enzim\u00e1tica semanal (6 semanas)<\/strong><\/h2>\n\n\n\n<p>Para cada una de las seis botellas tratadas:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>A\u00f1adir <strong>15 mL<\/strong> de soluci\u00f3n enzim\u00e1tica fresca.<\/li>\n\n\n\n<li>Cerrar inmediatamente la botella.<\/li>\n\n\n\n<li>Almacenar protegidas de la luz, a temperatura de bodega (&gt;13\u00b0C).<\/li>\n\n\n\n<li>Repetir<strong> una vez por semana <\/strong>durante 6 semanas.<\/li>\n<\/ol>\n\n\n\n<p>Cada botella representa un tiempo de contacto diferente: <strong>Semana 1 \u2192 Semana 6.<\/strong> <\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>4. Evaluaci\u00f3n sensorial<\/strong><\/h2>\n\n\n\n<p>Realizar la degustaci\u00f3n <strong>una semana despu\u00e9s de la \u00faltima adici\u00f3n.<\/strong><\/p>\n\n\n\n<p>Evaluar para cada botella (control + semanas 1\u20136): color, nariz, boca y observaciones.<\/p>\n\n\n\n<p><strong>Objetivo<\/strong>: determinar el tiempo de contacto \u00f3ptimo respecto al control.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>5. Reproducci\u00f3n a escala de bodega<\/strong><\/h2>\n\n\n\n<p>Una vez identificado el tiempo \u00f3ptimo: aplicar <strong>2 g\/hL<\/strong> en dep\u00f3sito a temperatura de bodega y al finalizar, inactivar con <strong>5\u201310 g\/hL de bentonita.<\/strong><\/p>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-luminous-vivid-orange-color has-alpha-channel-opacity has-luminous-vivid-orange-background-color has-background is-style-wide\"\/>\n\n\n\n<h1 class=\"wp-block-heading\" id=\"smoketaint\"><strong>B) Protocolo de reducci\u00f3n del defecto de humo<\/strong><\/h1>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Principio<\/strong><\/h3>\n\n\n\n<p>Los fenoles vol\u00e1tiles asociados a la contaminaci\u00f3n por humo se encuentran principalmente en forma de gluc\u00f3sidos. Una formulaci\u00f3n glicosidasa completa permite liberar todas las formas libres, que posteriormente pueden eliminarse. <\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex
