Acelera significativamente la finalizaci\u00f3n de la fermentaci\u00f3n malol\u00e1ctica. Este ahorro de tiempo puede ser decisivo para vinos j\u00f3venes o con un pH elevado (&gt;3,6) y puede limitar el riesgo de desviaciones causadas por bacterias l\u00e1cticas o contaminaci\u00f3n por levaduras. <\/p>\n\n<p>Este enfoque aprovecha un entorno c\u00e1lido y rico en nutrientes para lograr una fermentaci\u00f3n malol\u00e1ctica m\u00e1s r\u00e1pida y controlada. <strong>\u00bfEl resultado? Aunque no fueron dise\u00f1adas espec\u00edficamente para la co-inoculaci\u00f3n, hemos utilizado con \u00e9xito v<strong>arias cepas de nuestras gamas Solo y Maloferm en co-inoculaci\u00f3n bajo condiciones espec\u00edficas.<\/strong><\/p>\n\n<p>Estas cepas est\u00e1n dise\u00f1adas principalmente para un uso secuencial, pero pueden ofrecer resultados interesantes cuando la co-inoculaci\u00f3n se gestiona cuidadosamente, especialmente en <strong>mostos equilibrados<\/strong> con buenas condiciones de temperatura y pH.<\/p>\n\n<p>Para obtener orientaci\u00f3n sobre la cepa m\u00e1s adecuada para su vino y su contexto de fermentaci\u00f3n, no dude en ponerse en contacto con nuestro equipo t\u00e9cnico.<\/p>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h2 class=\"wp-block-heading\"><strong>\u00bfCu\u00e1les son los factores importantes para la co-inoculaci\u00f3n?<\/strong><\/h2>\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p>Para lograr una buena tasa de \u00e9xito, es importante seguir varios puntos:<\/p>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>Buena gesti\u00f3n del crecimiento, desarrollo y nutrici\u00f3n de las levaduras.<\/li>\n\n\n\n<li>Buena gesti\u00f3n de la temperatura<\/li>\n\n\n\n<li>Evite un sulfitado excesivo en los vinos blancos (inocular a las 24 horas en caso de sulfitado &lt; 5 g\/hL, a las 48 horas si es de 5 a 8 g\/hL y a las 72 horas si supera los 8 g\/hL).<\/li>\n\n\n\n<li>Controle regularmente el \u00e1cido m\u00e1lico durante el \u00faltimo tercio de la fermentaci\u00f3n alcoh\u00f3lica.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:2%\"><\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<ul class=\"wp-block-list\">\n<li>En los vinos blancos con alta acidez, es fundamental tener en cuenta la ca\u00edda \u201cnatural\u201d del pH durante los primeros d\u00edas de fermentaci\u00f3n, as\u00ed como el metabolismo de compuestos nitrogenados de las levaduras. Posteriormente, el pH vuelve a subir cuando la levadura produce alcohol.
